Zwischen Herbst und Winter: Kürbiskuchen

  
Kürbiskuchen
(vegan), glutenfrei, laktosefrei, ohne raffinierten Zucker
ohne Backen

Zutaten:
1 Packung gepoppter Amaranth / one bag of popped amaranth
Kakaobutter / cocoa butter
Kokosöl / coconut oil
Mandelmus / almond puree
Backkakao / baking cocoa
Honig und/oder Ahornsirup / honey and/or maple sirup
Zartbitterschokolade (200-300g)  / dark chocolate
Zimt / cinnamon

Ihr seht, ich habe keine echten Mengenangaben, da ich meistens nach Gefühl koche und backe.
Pumpkin cake: You see, I have no real  weights or measurements here as I bake and cook mostly intuitive. 
This cake needs no oven, only a fridge. It can be vegan, it is glutenfree, dairyfree and without refined sugar.

Für den Boden
Kakaobutter und Kokosöl überm Wasserbad schmelzen. Zusammen mit Mandelmus, Honig und der Packung Amaranth vermengen bis die Masse ölig glänzend  und teigig ist. Zerfällt die Masse krümelig, ist sie zu trocken. Zerfließen muss sie auch nicht, aber im Zweifel ist das besser als die Krümelvariante. Kakaopulver dazu, ich sag mal, etwa so 3-4 Esslöffel. Ungefähr.
Die warme Masse auf ein Blech geben und gleichmäßig platt drücken. In den Kühlschrank damit und aushärten lassen. Passt nicht in den Kühlschrank? Seid kreativ! An einem zu großen Blech soll es nicht scheitern, wenn man doch auch Teller oder Auflaufformen hat.
For the cake base: melt coconut oil and cocoa butter over boiling water. Mix it with honey (or sirup), almond pruee and the amaranth until you have an dough, a bit glossy from the oil. The dough is supposed to be soft, not crumbly.  You don't need to add butter and oil until you reach a creamy constistency, but the dough should really be far away from dry. Add cocoa powder, I guess about 3-4 table spoons full. Pour the sttill warm dough on a baking plate and gently press it until the plate is fully covered with a thin amaranth layer. Put the plate in the fridge and let the dough harden. Maybe your plate does not fit into your fridge? Feel free to use any other flat container für your cake.

Für die Kürbiscreme
Hokkaido waschen, entkernen, in Stücke schneiden und kochen bzw. dampfgaren. Wer es noch nicht weiß: Hokkaidoskürbisse muss man nicht schälen. Nur diese pockigen Stellen und natürlich die Blüte und die Narbe, die schneide ich ab. Wenn der Kürbis weich ist, pürieren (ohne das Kochwasser!). Auch hier rührt ihr noch geschmolzene Kakaobutter ein, damit die Masse später im Kühlschrank etwas fester wird. Ahornsirup passt ganz hervorragend dazu. Die Kürbiscreme ruhig großzügig süßen. Der Amaranthboden braucht nicht so viel, aber hier gebt ihr ruhig eine Portion extra dazu. Ich brauche ja wenig Süße, aber bei dem Kuchen habe ich schon mehr gesüßt als sonst und er hätte ruhig noch mehr vertragen. Ein, zwei, drei Prisen Zimt dazu und wie gesagt alles schon weich und gleichmäßig pürieren. Hokkaido ist so weich, das geht zur Not aber auch mit einem Stampfer und etwas Geduld. Kürbiscreme auf den Amaranthboden streichen und wieder kalt stellen.
For the pumpkin creme: clean and deseed the hokkaido, chop into icecube sized pieces and cook them. Better use a steamer, because you won't need any water, when the pumpkin is done. Your hokkaido is squashy, then blend it together with some hands full of melted cocoabutter (with that ingredient, the creme will harden a bit, later in the fridge), a bit cinnamon and a little lot of maple sirup. Normally I am no fan of a lot of sweetness in my food, but for this cake I say: add more! I took more, than I usually do, but still the creme could have been sweeter for a perfect taste. The amaranth base does not need much sweetness, but the creme definitely does. Pour the creme on the hardened surface of the amaranth base and spread evenly. And again: in the fridge!

Für die Schokoglasur
Einfacher geht's kaum: Schokolade schmelzen und über die Kürbiscreme verteilen. Muss man aber  gaaaanz sanft verstreichen, um nicht mit der Creme zu mischen. Kalt stellen.
For the chocolate icing: That's easy: melt the chocolate and pour it over the pumpkin creme. Geeeeeently spread it and - a last round in the fridge. 


Das Ergebnis ist ein flacher Blechkuchen mit knackiger Schokoglasur, cremiger Füllung und crunchigem Boden. Geschmacklich zwischen Herbst (Kürbis) und Weihnachten (Zimt). Einfach genial! ich habe so viel Zutaten nachgekauft, dass ich demnächst gleich zwei Bleche machen kann, um mich zu bevorraten.
The result is a flat plate cake with a crisp chocolate topping, a smooth creme and a crunchy base. The taste is really inbetween autumn (pumpkin) and Christmas (cinnamon). Super delicious!


Ich liebe Kürbis! Deswegen bevorrate ich mich immer, wenn Saison ist. Diese hier lagern kühl und trocken auf der Terrasse. Ein trockener Keller tut es natürlich auch, der hat den Vorteil auch noch dunkel zu sein.
I love pumpkins! So I stock them, when  it is pumpkinb season. They are easy to store cool and dry like I do on my terrace. A dry cellar works as well.
